Chef Thomas O’Neil with Suicide Bridge joins us in the kitchen to make herbed oysters.
Herbed Oysters
2 Sticks of butter
4 Cloves of garlic
Zest of one lemon
Juice of one lemon
3 Rosemary sprigs
3 Thyme sprigs
Parsley
4 Tbsp Parmesan cheese
12 Fresh local oysters
Set broiler to high. Let the butter soften at room temperature while chopping the garlic, herbs and zesting/juicing the lemon. Combine all the ingredients in a stand mixer or food processor. Put at pat of the garlic and herb butter on top of freshly shucked oysters and finish in the broiler.
