There are many ways to get creative with cauliflower in the kitchen.
Sarah McKeown, owner of Nectar Cafe and Juice Bar in Lewes, Del., is in the DelmarvaLife kitchen making cauliflower steak.
Cauliflower Steak Recipe:
1 cup rice
5 cloves minced garlic
1 thick slice cauliflower
1/4 c. roasted grape tomatoes
2 T. capers
2 T Kalamata olives
1/4 cauliflower florets
1/2 Romesco sauce.
Romesco sauce recipe:
2 large roasted red bell peppers
1 garlic clove
1/2 cup sliced almonds
1/4 cup tomato puree
2 T. chopped flat-leaf parsley
2 T. red wine vinegar
1 t. smoked paprika
1/2 t. cayenne pepper
1/2 cup extra virgin olive oil
1 t. kosher salt
Pulse first 8 ingredients in a food processor until very smooth. Drizzle in olive oil slowly.
Cook rice.Slice head of cauliflower into three thick slices. Brush each slice with minced garlic, season with salt and pepper. Roast cauliflower in oven at 375 degrees for 10-15 minutes. Sear both sides of cauliflower steak on grill until browned. Sauté tomatoes, olives, capers and cauliflower florets. Place cauliflower steak on bed of rice top with romesco sauce and sauteed veggies.
