Ingredients:
- 6 oz of Wild-caught salmon
- Salt
- Blackening seasonings-ingredients listed separately
- Olive oil to brush on to fish
- 1 Lemon quartered
- Mixed lettuce greens or wild rice
- Blackening seasoning is equal parts (start with 1 teaspoon of each and change to taste)
- Black pepper
- Paprika
- Cayenne pepper
- Onion powder
- Garlic powder
- Dried basil
- Dried thyme
Instructions:
Leave skin on if possible and season first side with salt. Brush on olive oil and add enough blackening seasoning to coat fish without burying it under the rub. Heat pan to medium heat and place fish skin down. Cook 2-3 min and squeeze on one-quarter of lemon. Flip, peel skin (or not) and cook for 2 more min squeezing on another lemon quarter. Serve over fresh mixed greens or wild rice.
