Our viewers enjoyed when we had Kelcie Mahr in the kitchen with her carrot dogs and chickpea tuna, so we invited her back!
Today, we’re making Vegan BLT Pasta Salad. Instead of bacon, we’re using coconut chips.

Vegan BLT Pasta Salad:
1 bag of coconut chips
3 tablespoons liquid smoke
1 1/2 tablespoons pure maple extract
1 chopped tomato
1 small chopped onion
1 head of romaine lettuce
1 cup just mayo (add or subtract to your own liking)
1 box of noodles (chickpea, lentil, etc.)
1. Set the oven for 350 degrees.
2. Place coconut chips in a pan with liquid smoke and pure maple extract.
3. Bake for 12-14 minutes
4. Boil your noodles.
5. Cook the noodles for 8-10 minutes and strain.
6. Chop lettuce, tomato and onion and place in a bowl.
7. Mix in your noodles and add just mayo.
8. Add your coconut chips.
9. Mix and enjoy!
